Cote Hill Blue Cheese & Spring Onion Scones

Very easy to make & great flavour. These scones freeze well too.


360g self raising flour

1/2 tsp mustard powder

pinch cayenne pepper

salt & black pepper

60g butter

2 large eggs

5 tbsp milk

120g Cote Hill Blue crumbled or grated

4 spring onions chopped

Set oven to 200°C / Gas Mark 6


1. Sieve flour, mustard powder, cayenne pepper & salt & black pepper. 

2. Rub in the butter to the mixture until it resembles breadcrumbs.

3. Mix in the onions and cheese.

4. Beat the egg & milk together, then make a well in the flour mixture & mix together to form a soft dough.

4. Knead lightly (DO NOT OVER WORK!) and cut into rounds.

5. Brush with milk & sprinkle with more cheese.

6. Bake for 12 - 15mins or until brown.
